Potato Kale Soup
 

 

potato kale soup

 

Ingredients

1 tablespoon extra virgin olive oil
1 organic onion, chopped
4 organic green onions/scallions, diced
8 cups organic turkey or chicken stock
8 organic potatoes, peeled and sliced
4 cloves organic garlic, peeled, root ends trimmed
1 bunch organic kale, trimmed, washed and thinly sliced
1 tablespoon Celtic sea salt
1 tablespoon freshly ground black pepper

Directions

1. In a heavy stockpot, heat oil over medium heat. Add onions and saute until softened, 5 to 10 minutes. Add turkey or chicken stock, potatoes, garlic and green onions and bring to a boil. Reduce heat to low and simmer, uncovered, until potatoes are tender, 10 to 15 minutes.

2. With a slotted spoon, transfer the potatoes and garlic to a bowl; lightly mash with a fork. Return to the soup and bring to a simmer. Stir in kale, a handful at a time. Simmer for 5 minutes, or until the kale is tender.
